Torta Havannet – Dulce de Leche Chocolate Pie

Pastry, dulce de leche and chocolate? What’s not to love about this rich and gooey South American pie? Make it a day ahead and chill overnight in the refrigerator for best results.

INGREDIENTS:
1 1/4 cups all-purpose flour
1 tbsp unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 stick (4oz) butter, cut into small cubes and chilled
1 large egg, lightly beaten
2 1/4 cups (18 fl oz) dulce de leche (Manjar brand)
6 oz bittersweet chocolate, roughly chopped
1/4 cup (2 fl oz) heavy cream

INSTRUCTIONS:
In a food processor, combine flour, cocoa powder, baking powder, baking soda, salt and butter. Pulse until mixture resembles coarse crumbs. Add lightly beaten egg and pulse until mixture forms a ball. Gently form dough into a disc, cover with plastic wrap and refrigerate for at least an hour.

Preheat oven to 350˚F and grease a 10″ pie or cake tin. Roll dough out to 12″ circle and press into prepared tin. Place a circle of parchment paper and a cup of dried beans or rice on top of pie shell. Bake for 10 minutes. Remove beans/rice and parchment and bake for a further 5 minutes. Set aside to cool. When pie shell is cool, fill with dulce de leche. Warm cream in a small, heavy bottomed pan until almost boiling. Remove from heat and stir in chocolate until melted. Pour chocolate mixture over dulce de leche and spread evenly.

Refrigerate until chocolate is hardened, preferably overnight, then unmold and cut into thin slices with a sharp knife.

The Dabble gang know exactly how to throw the perfect snowshoe party. And a cool party needs a warm drink.

Ingredients

1 oz white creme de cacao
1 oz Chambord raspberry liqueur
4 oz hot chocolate
1 can whipped cream
Sprinkles (optional)

Directions

In a thermos, add creme de cacao, raspberry liqueur and hot chocolate. Shake well, pour into a glass and top with whipped cream. Add sprinkles for a festive touch.

Take your time when you sip this deeply satisfying dark chocolate treat. Aim for cocoa that is 70% or higher and feel free to languish in your enjoyment of this indulgence. I’ve given you two versions—guilt-free mixed with buttermilk or pure decadence made with half and half. Only you’ll know which version you’re serving.

INGREDIENTS:
2-3 oz dark chocolate
4-6 oz half and half cream or buttermilk

INSTRUCTIONS:
Use the microwave to melt chocolate in a microwave safe bowl. Melt in 20-30 second increments until very soft and then use a whisk to stir. In a separate bowl, warm your choice of liquid—either buttermilk or half and half—for 30 seconds. Then blend the chocolate and liquid together, pouring an ounce at a time and whisking to blend.

1. Closed to cars, Váci utca is Pest’s premier shopping street. Despite the usual suspects, like Italian department store Coin (Coincasa section has fun bedding and kitchenware) and the typical tourist spots where you’ll find Hungarian gifts no doubt produced in China, there are some lovely stores selling clothing, jewelry and porcelain. Don’t miss the chocolates at Csokoládé & Delikat.

Dabble Savvy: Chocolate shops are always air conditioned, making them a real draw on the hottest days. Bacchus is a wine shop with a good selection and attentive staff. Café Molnár’s sells kürtoskalac or rolled donuts with coconut, cinnamon, chocolate and almonds.

2. Sure it’s touristy, but there’s no way you come to Budapest without at least a cursory visit to Grand Market Hall, (Nagycsarnok). Most of the goods fall into the souvenir category, but there are some exceptions including lovely leather bags, Bavarian textiles and exceptional food. Find a lunch counter on the second floor and enjoy a spicy Hungarian sausage with red cabbage and cold beer. Then check out the selection of paprika on the main floor.
